CouCou Bakery is more than a bakery - it’s a family story that began many years ago in Paris, with my grandfather Jean.

Born in Paris to a Polish family, he learned the art of baking in a small neighborhood. He learned that great bread and pastries come from patience, love, and good ingredients - and that baking is really about bringing people together.

After the war, he moved to Poland, carrying not only his memories but also the scents and secrets of Parisian baking.

It was here that he met my Polish-Danish grandmother Antonia, my mother’s mother, and together they continued the art of bread-making, kneading love and resilience into every batch.

Today, at CouCou Bakery, we carry on their story. We bake with the same care and joy they did, mixing a little bit of Paris with a lot of Polish heart with Danish hygge. Every brioche, tart, loaf, and cookie is made to share, just like they would have wanted.

Because for us, baking isn’t just a craft — it’s our family story.

Our ingredients

Our flour is sourced from trusted mills that specialize in finely milled, high-protein grains, giving our cakes and tarts their delicate structure and soft, buttery crumb.

We use farm-fresh eggs from local suppliers to ensure a rich color and velvety texture in every dough and custard.

Only pure butter, never margarine, goes into our laminated pastries, delivering that signature flaky, melt-in-your-mouth finish. For sweetness, we rely on unrefined cane sugar and natural honey, which bring depth and warmth to our baked goods.

Each recipe is brought to life with seasonal fruits, artisan chocolates, and handcrafted jams, ensuring that every bite captures the essence of freshness and flavor. From Madagascar vanilla beans to roasted nuts and French cream, every ingredient tells a story of quality and passion.
